RECIPES AND TIPS

The botanical name Tuber Magnatum Pico refers to the fruiting body of the most prized, sought-after and well-known truffle in the world. Its name, in Latin magnatus translates as 'wealthy gentleman', aims to underline its refinement due to the inebriating aroma

Why is it called tuber magnatum pico??

🍽️ PORTION SIZE
The standard portion of white truffle per dish is 5 grams per person. This is, in our opinion, the ideal amount to fully enjoy its flavor.

 

🚫💧 SHOULD YOU WASH TRUFFLES? YES!
We always recommend washing the truffle just before use. Washing is necessary because truffles grow underground—and in the worst-case scenario, they may have been in a dog’s mouth.

 

🧼 CLEANING
To clean dried black trumpet mushrooms, we recommend removing the base of the fruiting bodies and eliminating any remaining leaves or twigs. This species grows among fallen leaves, which are often also found inside the mushroom itself.

 

⏱️ COOKING WHITE TRUFFLES? NEVER!
On the label, the preposition “OF” must be clearly indicated, and white truffle must be the first ingredient listed. The presence of truffle aroma helps ensure product consistency throughout the year. A typical example is our 90% white truffle cream.

White truffle should always be used raw on the finished dish. We recommend slicing it right before eating.

 

🚫🍚 SHOULD I STORE IT IN RICE?
Absolutely NOT!!
Rice is the worst place to store fresh white truffle. As a starch, it absorbs the moisture naturally present in the truffle, ruining it irreparably.

 

🧊 STORAGE
White truffle can be stored for 4–5 days after purchase.
Nespoli Funghi guarantees freshness even for truffles given as gifts, but only if consumed within 4–5 days from purchase and if properly stored.

 

🧊📄🫙 HOW TO STORE IT
Wrap the white truffle in paper towel and place it in an airtight jar in the refrigerator.
The airtight container prevents the truffle’s strong aroma from affecting eggs, milk, cheese, and other foods in your fridge.

 

❄️ HOW TO FREEZE IT (only in emergencies)
Yes, white truffle can be frozen, but this should be a last resort.
Frozen truffle should be sliced while still frozen directly onto the finished dish. Freezing only affects the color—not the flavor.

 

🔪 DO YOU NEED A TRUFFLE SLICER?
We recommend using a smooth-bladed truffle slicer, but if you don’t have one, a smooth-bladed knife will do. Slice it very finely.

⚠️🚫👀 BEWARE OF TRUFFLE PRODUCTS
The vast majority of truffle products on the market are truffle-flavored, with white truffle included in such small percentages that it appears near the end of the ingredient list.
This clearly indicates that the product is essentially chemically-based—in other words, just “a fragrance.”

WHITE TRUFFLE IS USED RAW ON THE FINISHED DISH

 

White truffle is a condiment, so the dish must be properly salted (i.e., a finished dish) before the truffle is added.
