Rice is the last place to store fresh white truffles. Notoriously, rice is a starch and dries out the water naturally present in your white truffle, ruining it beyond repair.

The white truffle is stored wrapped in paper towels in an airtight jar in the refrigerator.

The hermetically sealed jar will prevent the truffle from contaminating eggs, milk, cheeses and any other food in your refrigerator with its fragrance.

Yes, it is possible to freeze white truffles but we recommend using it as a 'last solution'.

The frozen white truffle must then be sliced ​​from frozen onto the finished dish. Freezing only changes the color of the truffle but not its goodness.

We advise anyone to wash the truffle only when it is to be used but washing it is always necessary because the truffle grows underground and in the worst case scenario it has even been in a dog's mouth.

The vast majority of products on the market are TRUFFLE and white truffle is included in such low percentages that it makes them one of the last ingredients on the list. This makes us understand that the product we are purchasing is essentially chemical-based (therefore, in fact, a perfume).

It is recommended to use a smooth-bladed truffle slicer but if it is not available, the use of a smooth-bladed knife is sufficient. It is advisable to slice it finely.

The preposition DI must be clearly indicated on the label and the white truffle must be the first ingredient present. The presence of aroma allows us to guarantee that the product is always the same despite being produced several times during the year, a typical example is our 90% white truffle cream.

Warming up white truffles? Never

Absolutely NO, the white truffle is used raw on the finished dish. It is advisable to slice it at the moment, just before preparing to eat it.
