WHAT IS THE HARVESTING PERIOD FOR THIS PARTICULAR FUNGUS?
The harvesting period of this mushroom is spring, which is why, although it is one of the most tasty and flavorful species, it is known only in certain regions and in some specific countries (such as France)
THE DISCOVERY IN MILK
It is recommended to use milk because it allows the mushroom to lighten during soaking. The milk should then be discarded and cannot be reused for cooking.

Yes, you can freeze them, we also recommend cleaning them, cooking them halfway, and then freezing them, preferably already portioned according to your needs.
Dried morels can be stored in the freezer, as already recommended for most of the dried mushrooms we sell. They will remain unchanged over time, we recommend placing them in a box or avoiding placing heavy products on them so as not to shatter them.
We recommend passing them one by one with running water. If they are usually sautéed, we recommend cutting them in half, while if the dish requires filling it is preferable to be very meticulous with cleaning. As indicated above, they tend to retain the sand typical of the environment in which they grow.
THE NAME
The name of the mushroom morphologically recalls it, in fact the morchella or morel is characterized by a cap with alveoli that are reminiscent of a sponge.
COOKING TIME
HABITAT AND SEASONALITY
Usually cooking takes 15/20 minutes over medium-low heat. Morels are excellent with cream and ham or as a tasty side dish.
Morels grow during the month of April and not in the woods. They are in fact typical of rain-fed areas and sandy and gravelly soils.
