WHAT IS THE HARVESTING PERIOD FOR THIS PARTICULAR FUNGUS?
The harvesting period of this mushroom is spring, which is why, although it is one of the most tasty and flavorful species, it is known only in certain regions and in some specific countries (such as France)
🍄 THE NAME
The name of the mushroom reflects its appearance: in fact, the morchella or morel is characterized by a cap with pits that resemble a sponge.
🌲 HABITAT
Morels grow during the month of April and not in forests. They are typically found in rainy areas and on sandy or gravelly soil.
🍽️ PORTION SIZE
The standard portion per person is 7–8 grams of dried product or 100 grams of fresh product for a first course. If used as a side dish, we recommend 150 grams of fresh product or 10–15 grams of dried product.
🥣🥛 SOAKING THE DRIED PRODUCT
Milk is recommended because it helps lighten the color of the mushroom during rehydration. The milk must then be discarded and cannot be reused for cooking.
After soaking the dried morels in milk overnight, rinse them thoroughly under running water, as this mushroom tends to retain sand from its natural growing environment.
🚫🥛 DISCARD THE MILK USED FOR REHYDRATION
The milk used to rehydrate dried morel mushrooms should never be reused. It will certainly contain sand due to the characteristics already mentioned.
🧼 CLEANING
We recommend rinsing each one individually under running water. If they are to be sautéed, it's usually best to cut them in half. However, if the recipe requires stuffing, be meticulous with cleaning, as these mushrooms tend to trap the sand typical of their habitat.
⏱️ COOKING TIME
Cooking usually takes 15–20 minutes on medium-low heat. Morels are excellent with cream and ham or served as a tasty side dish.
🎨🍽️ DISH COLORING
During cooking, the mushroom retains its dark color, slightly tinting the dish gray.
🧊 STORAGE
Dried morels can be stored in the freezer, as recommended for most of our dried mushrooms. They will remain unchanged over time; we suggest using a box and avoiding placing heavy products on top to prevent them from breaking.
❄️ HOW TO FREEZE THEM
We also recommend cleaning them, cooking them halfway, and then freezing them—preferably already portioned according to your needs.
