frozen whole porcini mushrooms

RECIPES AND TIPS

FROZEN MUSHROOMS AND SNAILS

laws and regulations

use and consumption

curiosity

do you sell all marketable species even frozen??

No, there are some species that are mathematically not possible to market in this form because in reality there is no real demand for them on the market. The use of dried mushrooms is preferred.

THE PORTION

NOT DEFROSTING THEM IS FUNDAMENTAL

COOKING TIME

Frozen mushrooms should never be defrosted. If this happens, they will lose consistency and nutritional values and in fact, by dispersing, they will not give the right portions that you should get with the quantity purchased.

The standard portion per person is the same as the fresh product, the only substantial difference is that frozen mushrooms are already cleaned, so if you were to buy a kilogram, it would be a full kilogram of product without any waste.

The cooking time is the same as for mushrooms of the same kind in the fresh version. So for the porcini mushrooms 15/20 min, for the chanterelles 40/45 and for the trumpets of the dead 20 min.

CONSERVATION

THE USE, RINSING

Frozen products, if there are no malfunctions in your freezers, will remain unchanged for one year from the date of production. The same is always shown on the packaging.

THEY MUST NOT BE DEFROSTED!!

We always recommend giving frozen mushrooms a quick wash too, to remove any ice residues. Once quickly run under cold water, they can be chopped and cooked to taste.

If you decide to freeze purchased or collected mushrooms at home, you must take into account that our freezer is a suitable tool for maintaining already frozen products while for freezing, as other foods are present, it does not guarantee that the same will happen in a short time. In fact, the fresh product spoils before the same product cooked or half-cooked and the same goes for mushrooms.

RAW CHANTERELLE MUSHROOMS

THE SHELL-LESS SNAILS

As anticipated, chanterelle mushrooms must be brought to half cooking before being frozen at home. On the market, available mainly for catering, there are also frozen raw ones, as a scrupulous procedure is followed which freezes them when dry in order to prevent them from becoming bitter.

Before being used, the snails must be defrosted, washed under water to ensure there are no shell residues and then cooked as desired, taking into account that they are already purged and clean.

LAMINATE OR WHOLE

Our customers definitely prefer laminated mushrooms. They are already cleaned and cut and very easy to use because they are ready to be thrown into the pot (after being washed as indicated above).
