WHY DID WE CREATE A DIFFERENT PAGE FOR THE SAME MUSHROOM?

The real reason that pushed me to make two different explanations is linked to the fact that the Amanita caesarea, i.e. the ovolo (egg), is often and only known for its goodness in salads (i.e. eaten raw) but many do not know that they have cooked (heated) it is fabulous.

CLOSED OVULO AND OPEN OVULO, WHAT ARE THE DIFFERENCES?

AMANITA CAESAREA, CURIOSITY 

An open ovolo is defined as a fully developed specimen of Amanita caesarea, therefore a complete specimen with an open umbrella-shaped cap, and the stem with a visible ring and volva.

Open fruit bodies, on average, have a shorter shelf life compared to closed ones, but it is recommended to use them within 2 to a maximum of 3 days from purchase.

TIPS AND COOKING TIME

FREEZING OVOLI MUSHROOMS?

CLEANING

We recommend cutting them and placing them in a pot where a bit of oil (or butter) and onion have already been sautéed, as it tends to be less overpowering in taste compared to garlic. That said, the cooking time is a few minutes. The mushrooms will change color from orange to beige. They are not objectively beautiful to look at, but they are delicious, especially when adding a sprig of rosemary.

Yes, it is possible to freeze them but, being a mushroom that cooks in just a few minutes, the risk is losing the texture when they are reused. It's a different story if they are used for sauce. 

Open ovoli mushrooms must be carefully washed under water, making sure that the gills are clean and there are no residues of soil. The mushrooms should then be left to dry on the sink for a few minutes before proceeding to slice them.

The closed truffle is definitely more sought after than the open one, and that's why it generally has a significantly lower price.

CRUDI ?

Cooked ovoli are excellent for seasoning, especially pasta. By adding an egg to the cooked ovoli, you will get amazing scrambled eggs, or they can be used by adding a bit of tomato as a seasoning.

Of course, just make sure to dry them very well and then season them exactly as if they were closed. The tastiest part is the meat (the yellow part), so you will definitely achieve a result worth remembering.
